Country Ham Canapes

Country Ham Canapes

2 cups finely ground country ham
1 cup finely ground aged cheddar cheese
Mayonnaise
24 thin slices of fresh bread
Unsalted butter at room temperature

Preheat the oven to 325°F.

Combine the finely ground country ham and cheddar with just enough mayonnaise to bind the two ingredients together. Cut circles of bread and press them into heavily buttered mini-muffin pans. Fill each appropriately with a tablespoon or so of the ham-cheddar mixture. Bake for about 15 minutes.
